I know of some kitchens that use 40/60 ratio Garlic/Ginger. One that used 40/60 plus green chilies blended in with it...

I asked the chef why that ratio, his reply was garlic would overpower ginger...his words.  :-\

Oh! they were Pakistani chefs.

That curry feast looks fantastic well done, and I?m sure I could smell it while I was out cutting the grass, as I got the curry munchies and had to drive out to Forest Lake QLD later on, to get my usual fix of Indian food.

Looks fantastic, I loved a Lamb Karahi when I lived in Scotland...one to try...Yeah George strange symbols, could present a problem for newer members.

Copies, copies and even more copies  ::) 1. Main curry folder on two laptops with menu folders within, similar to Stephen Lindsay along with folders for bases, starters, mains, breads, deserts and so on. 2. Copies of this folder onto two external harddrives. 3. A copy on a memory stick. 4. Printed copies kept in a binder. 5. Lastly, copies sent to my on-line email. Anal I know but!  ::)
