in a BIR kitchen it's to what i have put , there is no time to piss about with abit of this and a bit of that.
it's the same in all curry's 50/50

1. Main curry folder on two laptops with menu folders within, similar to Stephen Lindsay along with folders for bases, starters, mains, breads, deserts and so on. 2. Copies of this folder onto two external harddrives. 3. A copy on a memory stick. 4. Printed copies kept in a binder. 5. Lastly, copies sent to my on-line email. Anal I know but! :
