2 Kg      Onions

1       Large bulb of Garlic.
3 inch       Fresh ginger.
?       Medium white cabbage.
1      Medium green capsicum.
1tbsp       Salt.
3 litres       Water
Handful    Fresh coriander & stalks.
4 tbsp      Tomato paste or ? Chefs spoon.
3 tbsp      Spice Mix (for a stronger flavoured base)

Spice Mix
2 tsp       Madras Curry Powder
2 tsp       Turmeric Powder
1 tsp       Coriander Powder
1 tsp       Cumin Powder
1 tsp       Kashmiri Chilli Powder
? tsp       Garam Masala or Kitchen King

METHOD:
1.   Wash and coarsely chop all ingredients EXCEPT ONIONS.
2.   Place all ingredients (except the tomato paste and spice mix) in a large saucepan
3.   Cover the pan and bring to a medium simmer
4.   Simmer for 2 ?  hours (30 min if using pressure cooker)
5.   Add Spice mix and Tomato paste
6.   High Simmer for a further 10-15 minutes

Curry Base Chat / Re: Recipe to base ratio?
February 16, 2012, 09:28 AM
OK so chewytikka's base it is!

Is it this 3 hour base? https://curry-recipes.co.uk/curry/index.php?topic=5635.0 and go by the original recipe on the first page? Or was it revised some place throughout? (15 pages of comments can be hard to decipher lol).

Once that is done can you recommend a tried and tested recipe to compliment it?

Thanks a lot guys  ;D

Curry Base Chat / Recipe to base ratio?
February 15, 2012, 11:55 AM
So far I have had great success with CA's base and curries combo. However I am now finding it hard to know whos to try next and don't want to become lazy and only cooking CA's.

I am finding it hard to pick another base as some seem more vague on the weights and measures and more problematic is its hard to tell which are most widely used in recipes.

Does anyone know of a list that says for example "CA Base - 10 recipes" etc...

Failing that can anyone point me in right direction of a good base / recipes to try following CA's Stella start

Thanks

Cooking Equipment / Re: This Burner any good?

I just purchased this kit on fleabay: http://www.ebay.co.uk/itm/170735689939?ssPageName=STRK:MEWNX:IT&_trksid=p3984.m1497.l2649 all in for just over ?13 so not too bad.

So thats all the bits sorted. Now to look for a guide on how I can increase the bore of the jet if it is not powerful enough. Anyone know what tools I need?

Thanks

Thanks CA another great Curry :)

We both enjoyed this one, however either my GF has eaten too many of my curries or this could for us have done with being a little hotter.

I have been experimenting with dried Bhut Jolokia I got cheap on ebay in your Madras, and although it is too hot to be called a Madras tastes amazing so might try one of those chillies in this.

Thanks again CA  :D

Thanks Guys just ordered it.

For that price it will be a good place to start and hopefully will allow me to also cook paella outdoors when we go on road trips in the camper van.

So next question is what fixings will I probably need to get this working with my current Gas bottle here:

I am guessing I will need:

  • Another regulator similar to the one shown above
  • Gas Standard piping
  • Jubilee clips
  • Way to control flow of gas

Any tips, links, advice etc much appreciated. Also does anyone know if I can work out the equivalent kw rating of this given the information in the ebay description?

Thanks

Curry Videos / Re: CA's Korma

Hi Spencerian, thank you very much for your feedback. Your right about needing a narrative, but I felt a bit of a plonked as we are in a house share lol. If I had the time I would have added on screen text instead, but I intend to make some more complete videos in the future.  I hope you enjoyed the Korma, CA has some great recipes.

Cooking Equipment / This Burner any good?

Hi Guys,

I would love to get an outdoor gas burner to be able to cook curries in the wild (well near my campervan lol) but at the moment do not really want to break the bank.

Can anyone comment on this ebay item? work out the Kw output?

http://www.ebay.co.uk/itm/LARGE-GAS-BOILING-RING-PROPANE-LPG-CATERING-BURNER-OUTDOOR-STOCK-BREWING-CATER-/170738529186?pt=UK_BOI_Restaurant_RL&hash=item27c0cf33a2

I guess I would need more fixings? Regulator, pipe etc?

Failing that could anyone recommend an alternative?

Thanks

Cannot wait to try this. Can I ask are no fresh chillies used? Looks like a scotch bonnet in your second pic. And is that 2 tablespoons of garlic? Also where do you get your chilli powder?

Thank you very much for sharing
