Hi Jamie,

I'm afraid to say this my friend, but I think you're hooked now, once and for all.  You have gone up 5 levels, just like most of us here but, now is where the obsession starts ;)

Trust me, after a couple of weeks, you will be striving for absolute perfection, even when your family and friends say that they have not had a better curry than yours.  You won't believe them, you will get paranoid and think that they are just being kind.

You will go to bed, thinking about the dish you made tonight, and the one that you will make tomorrow.  And when you get home from work and the missus asks "what would you like for dinner"  you will answer politely  Oh, Anything dear"  but all the while you will be thinking, curry, curry, CURRY!!!!!!

You will go shopping and see a lovely piece of fish and think to yourself  'mmm, wonder how I can turn that into a curry'

You will be in the pub with your mates and one will say, I knocked up a curry last night for me tea, and your ears will prick up, you will sit upright and quiz him on his ingredients, methods, techniques.  You will then realise that he is not on your level and you will smugly put him in his place!

You will be buying chewing gum by the kilo to disguise the hint of garlic and spice on your breath every day.

Your kitchen cupboards will soon look like the spice section in the biggest Asian superstore near to you and your home will constantly smell like your favourate BIR that you don't go to anymore because your curries are just as good.

or...................

You could just be sensible about things and have a curry twice a month ;D

Joking aside Jamie, well done, glad you've found success mate.

Ray :)

;D great post, lol

I still cant get hold of any mustard oil for the lasan tikka so been using blades & CA's.  I am going to give this a go tomorrow or Monday when I get the Madras/kebab paste.  Like your Photo Jerry, where did you get your skewers from?  I hate mine every time i turn them over the chicken follows it, lol.  they are flat ones but only a couple of millimeters wide, could do with wider.

Asda used to do frozen garlic in a kind of disposable ice cube tray, very convenient but dont know if they still do it (haven't been for a few years as its 10 mile away & Morrisons is 1/2 mile away), so now I use the Scwartz frozen chopped garlic when its in stock.

My favourite was also the first time I went for a BIR meal at the Indus Resteraunt in Doncaster, sadly gone now.  I wen't with about half a dozen mates and I don't know how they persuaded me to go to this day as my house didn't do any food apart from plain old british.  Anyway I looked at the menu and ordered steak 'n' chips & a soup for starter.  Out came my soup & these big elephants ears with some brown goo & oniony stuff for my mates (now I know it as mango chutney & onion salad) I tried it and thought wow! and barely touched the soup.  Then out came the main courses. The man next to me had ordered an "Indus Special" basically a red chicken leg, orange chicken breast, red lamb & a sausage with naan & multi coulered rice.  I tried all this and hardly touched the steak n chips, that was it I was hooked, the best steak & chps I ever had, lol.  To this day my favourite meal is a Tandoori mix with a vindaloo sauce , naan & rice but none compare to that first "hit".

That photo looks good, I will attemt these soon.  I tried to do UB vesion a while ago but failed miserably.  Time for another go at naan breads.  Unfortunately my pizza stone has cracked & I only used it in the oven for pizzas ???(quite a bit of chhese overflowed onto it ,maybe this caused it) I think the leson with pizza topping is less is more.  I also have no Tava, will a frying pan do? or best to grill on a baking tray?  I may buy another Pizza stone if its recommended for naan,  but pizzas seem ok on my cheap pizza tray.

I made this on Wednesday, it worked a treat.  I was out of fennel seeds so I added some cloves, cardomons & turmeric.  I have a ceramic hob & cooked it for 9 min & 9 min and out came light fluffy pilau rice ;D
thanks Peterandjen ;)

The Lasan BIR does  ;D,
The use of mustard oil in it did suprise me as the bottles I have seen say for external use only.  Is there any bottles that say ok for food?  If you are not allowed to use it for food why are lasan using it?  Its probably some EU directive ::)
