Lets Talk Curry / Dishoom

For anyone who has enjoyed a meal at Dishoom, they recently released a cookbook which I am starting to plough through. I made their chicken ruby which was very nice and was looking to make a few of their kebabs this weekend but Mrs T63 has just advised me she forgot to the lamb and the chicken out of the freezer.

Do you properly mash the meat down into a paste, as is traditional? I'd be interested in knowing how these turn out.

I cheat and blitz them with the hand blender once I have removed the meat from any bones.
Everyone of them turned out an acceptable dish but the one mix I originally used I cannot seem to find now. This is a variation on the Shan mix which has whole lentils and grains as opposed the ground version in the easycook mix in the photo above.

Pat Chapman had a good CTM sauce in his Bangladeshi Restaurant Cookbook which I used but with a Julie Sahni chicken tikka. That combination lasted for years at family gatherings.

Personally I find Vivek Singhs recipes very accessible and haven

Oh yeah, late 70s/80s curries. The best ever in my opinion. Thursday night out with the lads always finished off with a madras which was generally swimming in oil. Funny thing though. The following day everyone you went near usually said, "god you stink of curry". That just doesn't seem to happen nowadays. Something must have changed between then and now?

Possibly less booze these days. Getting the hangover sweats from a session coupled with a madras or vindaloo meant you
