ps going to look out for one of those bunsen burner sheets - he calls a "shouter"?

Lol Jerry, his poor engish accent is hard to get with some words I had to listen a few times too. He says 'Stove Top'.

I don't know if it would be too fine but what about these cheap anti-splatter guards you can buy for frying pans, maybe that would work?

When I first watched this video last week, I wondered if a blow torch could be used while the naan cooks on a frying pan or Tawa. I'm going to give this a go. :)

Hydration is measured by weight and is the ratio of water to flour. Fortunately, 300ml of water weighs 300g so its fairly straight forward to calculate.

A 100% hydration is equal parts of water to flour.

Well done on your curry but sweetcorn in rice? Mind you, I don't sauce on a bacon Sarnie so its horses for courses I guess.

The principle idea behind Jamie's School Dinners was to re-educate children to eat healthy alternatives with healthy being the principal goal. Given the budget that the state allows per child per meal, you could never produce a BIR or authentic curry with it. That's why I drew attention to it being from school dinners.

I do agree though, the state should pay more to feed our children and produce better food. What I found disappointing though, was that even with all the much better food available, the kids were still eating junk. Just to add insult to injury, parents were sneaking McDonalds to their kids in fear of them going hungry and they say its the kids that need educating!!!!! :-\

I can tell you this much about that missing something, if it wasn't missing I wouldn't be on a curry quest. I, like you, am amazed that it is so hard to find the true secrets, perhaps there really is no real secret. But I know that i'll never cook a decent naan at home until I buy a Tandoor.

Stephen, and we even have a chip shop thread to go with Jamie's Pukka. ;D

Hi John,

CA kindly posted my recipe for Sag Aloo here: https://curry-recipes.co.uk/curry/index.php?topic=4419.0

Its not strictly BIR but produces a great tasting dish and an easy one to make too. I hope you like it as much as the wife and I do.

Here's Heston Blumenthal's approach to Naan, note his opening comments.

In fairness though, it does say it is from School Dinners.
