Curry Videos / Chicken Tikka Lao Video Recipe
May 08, 2011, 05:52 PM
Hi All
A new realtime video recipe for you.(11.22)
If you like Butternut Squash or any type of Squash/Pumpkin (Lao) you'll love this preparation.
I've developed this new dish and cooked it with Lamb, Beef and even Duck Breast, they were all delicious.
It might not be a recipe for beginners, but should be a breeze for experienced members.
Just use your favourite base, tikka , mixed powder recipes etc...
Cheers Chewy

Hi Chewy,

Just trying to get my head around this one, so, if i have got this correct, this is flavoured chicken breast, wrapped around a mildly spiced keema, steamed and served on a bed of keema?

Got to say, it looks amazing, and is something I would love to put on the table for my next curry night.

Do they bash the breast's the flatten them down?

Ray :)
Hi Ray
It's steamed, portioned then added to a pan of Bhuna style sauce, finished off, then presented on a bed of the same sauce.
Pretty simple, but its all the flavours, I need to find out!
Yes, the chicken breast is flattened out, here's another pic, cheers

Ah, come on CT your teasing us! What did it taste like?
You were right Malc, bloody gorgeous! absolutely loads of flavour combinations
I'm going to twist Kohinoor's arm for the recipe, tricky as it sold out on the day,
and his regulars want him to add it to the main menu.
The interesting part was that he steamed the stuffed chicken breasts, took a pic
earlier in the week.

BIR Main Dishes Chat / Re: Freezing curry's

Cheers for that Ray

Maybe making big pots of the curries could work, but then refrigerating them at the end of the day would completely fill my already usually full fridge, and we dont have much more money to invest in another.

I think freezing them is out of the question really, some people are picky about microwaving food and I don't want that reputation.
Hi Phil
Just a thought, you may want to explore the Rice and 3 curries approach to this venture.
I remember years ago, in the midlands, there were corner shop Halal Cafes with very basic decor and a limited menu for that day.
They would only have 3 pots of curry, say Chicken, Lamb and Dhal and you would be served a big plate of boiled rice and your choice of curry, or all three plus a roti or Naan.
This was Incredibly cheap at the time and it was the first time I tasted the Balti flavour, mind you, I didn't know it was Balti till years later.

Reading the restrictions you face, I think this no frills approach, with a simple menu, would be the easiest and could probably work for you.
Anyway just an Idea, cheers Chewy

Hello all, Ive been trying to find a recipe for a plain chicken curry(not madras) or just the plain curry sauce(not the base)
I will be trying to make it with taz'z base sauce and spice mix  as its had a few good posts about it.
can anyone help?
Hi Aruba
In the BIR's I know, they start a plain chicken curry the same way as they cook many dishes.
Heat a chefs spoon of oil, add a little G&G paste, mixed powder, chilli powder, salt, precooked chicken,
curry base and a pinch of chopped coriander,. Cook this for 4-5 minutes and enjoy.
Have a look at my madras video to get the idea:
