To be fair to Adey, he has a couple of Bangladeshi guys running the kitchen as far as I can see, so he should have a good idea of what he is talking about...

Does that mean that the Bangladeshi guys are top chefs or learner onion choppers or just there for show?

I reckon a lot of the missing 5% bit is in the mind
I am satisfied with my results compared with the crap quality of some Birs.
Your probably cooking better currys than you think you are
Keep it simple and stick at it  ;D

If you knew the first thing about BIR you wouldn't have to ask the question. Your habit of talking down to people doesn't sit well with your ignorance of the subject at hand.

Do many proper Birs use mix powder? as it seems to appear more in recipes on forums and you tube etc
copy cat cooking just look at all the mix powders on this site

There is a little trick some of the top Birs use Not all I emphasise for the few on this site with reading difficulties
Find a little metal container then add a piece of lumpwood charcoal which you heat until grey and hot on your gas ring, then putadd to tin,place tin in bottom of the curry pan, add some ghee then any oily spice clove for example placed on top then coved with lid for 5 mins
A bit of effort but well worth it and fun as well This is a trad indian technique but used in 3 Birs I know

Try dumping it in a slow cooker for 8 hrs low after its made I have done this and it was the "dogs nuts" as they say the flavour was awesome ;D

No 3/4 of a teaspoon is Tellycherry pepper and with 2 tablespoons of 130k shu cayenne The GM is subdued to say the least :D
