The first picture is a version of Thai chilli sauce -
To make a reasonable sauce for your kebabs why not try this
three tbsp of Thai style sweet chilli sauce, small pot of natural yogurt and a tsp of Colman's mint sauce - stir it all up - if too thick add a little milk

Not sure mate
I have 15 trees growing at the mo - so fresh is always there - but dried is easier to crumble in the hand or blender to powder.
Growing to supply in the end so a couple more trees and hey presto
