If your going to use this ancient Indian Dhunga method
You have to use natural lump wood charcoal.
Even BBQ charcoal briquettes are suspect in my opinion.

Your average BIR does not use Dhunga, for your curries.
The smokey flavour of a good curry, happens naturally
through the BIR chefs cooking technique.

A good british Indian celebrity Chef
I like the way he assumes his readers can basically cook to start with.
I also like the believable anecdotes, which accompany each recipe.

This book is well put together with inspirational recipes and
spice combinations from famously a Fusion British Indian Chef.
Along with Atul Kochhar are at the top of their game.

If you can get this book for a quid, its winner winner chicken tikka dinner.

Mr Singh apparently loves his Tandor Oven and admits he could not operate
his restaurants without them.

Thanks, that clears that up, just never seen it written.

Its lost on most, but historically BIR Tandoori Chicken is always
Baby/Spring chicken, 700gm max. In the Halal Butchers they even call
the young Chickens, Tandoori Chickens. Current price 3 for 6 quid.

A bit of trivia for you Livo ;D ;D
