I just noticed that the water is missing from the recipe, it will be a bit too dry without it I think.

Thanks Garp. It's actually Adey Payne's recipe pretty much. The only thing missing was the fresh coriander, which I believe your not a big fan of anyway ;D

Made a few curries today including Madras and Vindaloo for the freezer. I couldn't not have a curry after all that so I decided to have a Pathia as I haven't had one for a while. The one tonight had no fresh coriander in as I'd run out but it was still really nice. Washed down with a pleasant elderflower cider.

That is a good question. I suspect it may be a bit of both. If I have a very long session of cooking curry I find that my senses are very dulled, but I do think that the dishes change a bit when left over night. I find the same thing happens with other types of dish too and also when I have had a shorter session.

That's it, yeah, fried onion! Mine was done in a pressure cooker which didn't give any control which is why I haven't cooked for so long since.
