bhuna (plural bhunas)

A type of curry, in which the spices are cooked in oil with no water.

I agree that a bhuna should be a thick, pasty dish rather than a rich wet sauce.
Maybe my local BIR (Wolverhampton) is different to the (Yorkshire?) BIR?

I really hope this ebook delivers an insight to what Chris feels it will offer.
I have tried  a few of Chris's recipes already and they do deliver, So i'm hoping that this will give us what we want as far as smell and flavour.

As for recipe requests....

A real Birmingham style Chicken Balti / Tandori Balti / Tikka Balti would be good.... I'm yet to get that fragrance and all the right layers of flavour in a balti

I don't know why people are getting so concerned about all this horsemeat talk.
As long as it tastes good and you can run a furlong and jump well, what is there to complain about?
We eat chicken, duck, pig, cow, fish, frogs, fish eggs, deer and now horse..... thats somewhat healthy compared to eating fungus which no one bats an eye to in a chicken & mushroom pie.

I can't wait for next week in Delhi and try some of thier wares :)

I've managed to commit a new supplier out there to take us to the Imperial for dinner 1 night :)

I have already been advised to stick to the 5* hotels and restaurants, but it would be such a shame to have a (possibly) 1 time visit to this part of the world and not try something authentic to the area.
I'm well aware of the water bugs and lack of personal hygine being the main reason for westeners comming down with sickness and diarohea (sp?), and I will be carrying with me an anti bacterial hand jell and other bits in my day sack.
The company has provided me with industrial strength 'immodium' tabs and my own IV & saline kit.

Has anyone been out there and can advise a few places to visit or cuisenes to try?

It will be my first time out of europe.
Got myself booked in for jabs (tetanus, polio, Hep A, Typhoid & Diptheria)

I'll be stopping at The Claridges hotel and will most likely be having dinner at The Imperial one night.

I just want to reduce the risk of Delhi Belly and still see a bit of culture while i'm out there.
