Curry Recipe Group Tests / Re: Pilau Rice Group Test

I'd be happy to participate in this.  May be time to start suggesting what recipes we use keeping it to about 5 recipes?

Hi

I was also surprised about the 1:1 ratio with the rice?  Is it because you soak it so long?  I always use a 1:2 rice to water ratio.

Is it me or is it just a series of rhymes and riddles and no real definitive answers being given from someone who works in a takeaway ???

Lets Talk Curry / John West Pilau Rice
October 14, 2011, 05:55 PM
Hi All

The other half bought some john west microwaveable pilau rice in a pouch.  Thought I would give it a try thinking it would be like the usual micro rice.  Actually quite nice with a good flavour and good grain separation.  Would recommend as a quick fix cupboard product!!

Traditional Indian Recipes / CHICKEN MALAYA
October 14, 2011, 04:18 PM
Hi All

I have been asked to make a chicken malaya which on reading an indian menu is basically a korma with the addition of some pineapple chunks and banana.  Is this correct??  If not, does anybody have a tried and tested recipe for it?

I am sorted on a Korma recipe.

Hi

I cook with meyer analon pans which are obviously not BIR but you can get a nice heat reduction without sticking!!  I tried stainless steel but couldn't be bothered with the scrubbing as always too lazy to soak straight awa :)
