Going to Delhi, Jaipur, Shimla etc end of year - rail trip wifes birthday treat - drop into Dubai on way back..  I was last in India 40 years ago - Mumbai (Bombay then).

Pataks lime pickle is a particular favourite of mine to eat as is spread inside a split pitta bread.

Interesting prog on ITV last night - featured Nisha Katona - owner of Mowgli Street Food restaurants.  3 locations - Liverpool, Manchester, Leeds.

Anyone tried her restaurants ?

Used mace & nutmeg in a 'luxurious' lamb chop tandoor marinade.  To be honest - couldn't tell the difference from previous marinades without.

Just a thought on 'spicy' oil.  About 4 years back, I used up some of my 50,000 scoville heat rated chillis to make 4 litres of chilli infused virgin olive oil.  I gave a litre of this to my neighbour - Pakistani - she rated it as very good in her cooking.

I note my daughter also uses garlic infused olive oil in her cooking.

Maybe there is a route to goal via using these types of oil?

Hi Phil Opps I've posted the same curry, one with and one without the flash! I've rectified this now,
For the record, photo three is my dish this is chicken tikka methi
Photo four is called Bagum Bhara this is a mix of chicken tikka and lamb mince! One of the wife's favourites

I often get a chicken madras with a layer of keema on top.  Delicious.

The inevitable hysterical 'racist' card has to be played by seemingly ignorant people who need to get an education IMO so they even begin to understand what is being said.  The correct term often relevant should be REALIST.  If I was 'racist' for instance, would I bother torturing myself by living / working in such an environment as the Middle East for 8 years ?  Highly unlikely.  I was on the receiving end of racism against whites ( & against English in particular by Palestinians) - but it is to be expected in certain arabic countries.
