I'm not sure what base you make but mine smells fantastic while cooking especially after adding the spice!  I even taste my base now as I'm cooking it, tastes nice on its own.

I think this is right, ive made a number of currys with chicken and a few with prawn, the prawn currys although nice do lack the extra flavour of the chicken. ?I cook the prawns in water and turmeric and thats about it but the chicken I use this method https://curry-recipes.co.uk/curry/index.php?topic=158.0

This came from a restaurant chef and to me is bang on, a bit of the sauce goes in due it just running of the plate and I think improves the taste.

I don't think theres much chance, I signed up for their monthly newsletter with recipes etc.. nearly 2 years ago now and I still haven't seen a single one!

Maybe its because they prefer authentic curry to our BIR.  The chef that showed me said he eats it but prefers authentic curry but I don't think thats the general opinion of chefs the majority have said because its unhealthy.  Another thing why would they say that when theres a possibility that you might agree with them and not come back to the restaurant again  ???

Yeah I'm sure that nothing goes to waste in the restaurant so its definitely a possibility, just seems a bit eek  :o

Ive thought that myself, for all we know there is a chef or two on here that are trying to through a spanner in the works  :-\

I can't see why though im sure that most chefs are approachable and don't mind talking about it once you know them.
