Anytime I heat one of my cast iron baltis up till they are smoking hot and I pour my just cooked curry in and everything is sizzling and smoking ---- I get the SMELL and when I taste the curry I just poured in -- i get the TASTE.

There is no secret ingredient... Its is all bout high tempratures, smoking and sizzling.

My first mistake when I started making currys was buying massive 1kg jars of powdered spices - They already were stale when I purchased them looking back and I remember adding like 8 table spoons of spice just to try and get some flavour in it - and the resuling curry tastes like onions and sawdust (this was before I discovered the base sauce as well).

I ground fresh stuff every friday in preperation for my weekend curry making sessions - which is the only time I am allowed to make curry in my house - my gf doesn't want the house stinking of spices 24/7. :D

Make a paste of your spices with a little water and oil.

Blasting the spices in the oil is the best part  ;D ;D

was looking for some more up to date info.. dont want to turn up to a block of modern apartments instead of a balti house  ;D

Going to brum next month on business and was wondering where is the best Balti Houses there?

I am going a few days so a list of recommendations would be good :D

Just a quick observation.... surely most bases are real bases? I am sure there thousands of establishments all over the UK all using different yet similar bases. Even my local turkish kebab shop can produce a tasty sizzling indian curry in several minutes.

Where is the black cardamom and clove? Essential for Rogan Josh  :)
