A digression, but I agree the 'acid test' is whether you could eat it cold for breakfast.

I used to go to 'The Islamabad' in Leeds back in the early eighties when I was a student there.  I have the ignominious distinction of having left that establishment at about 4am one morning when it closed, only to be back in for 'brunch' at about 11am!  Chicken madras in both cases!

That's true SnS, fresh are much better.  Freezing fresh fresh leaves works ok 'though, a kind of half way house in strengh terms between dried and fresh.

LOL, always seems to be the aloo stuffed paratha they forget down my way!

Yep

I use them in madras, about 5 dried ones fried in the oil with chopped chilie and a dried chilie, before the spice mix and base goes in.  Very happy with, it's just all the other dishes I have to master!

The Yanks certainly call what we would term tomarto puree, tomarto 'paste'; so in my opinion paste is more likely to be 'our' puree than tinned toms or anthing else.

I hear what you say about sticking 'to the letter' when trying the Ashoka stuff, and I certainly shall when I've depleated my current supply of base.

Could I please make another plea for a Ashoka recipie for madras?  Pretty please!

What garam masala do Ashoka use, pre bought or chef made; if the latter do you know the chef's recipie?
