I've had the kebab drop off the skewer turn into mince type thing happen to me when I make them, most notably when cooking for friends on my BBQ.

Thanks for the tip re onion juice.  I will be squeezing the water out in future.

Good job with the video Chris.  I like to see good honest efforts like this.  Others wouldn't be as brave.

Lets Talk Curry / Re: Your next two BIR curries?

Fancy something different for next curries, have been sticking to madras and Pathia recently so fancy a change.  May attempt a bhuna, it's one I really need more practice at. Feel that a magic ingredient or two may be required... Something to give it a savoury rich deep smoky flavour... I'm thinking lamb stock and black cardamom in some form.

Fantastic Chris. Looking forward to the ebook.

Already thinking about potential uses of the paste.

Supplementary Recipes Chat / Spice mix cockup
August 14, 2013, 10:37 PM
Having just made a batch of CA Spice Mix 2  grinding up cumin/coriander, making the usual mess, putting the spices back in the drawer/cupboard, cleaning up, I just realised I made a huge mistake....

... I used black cumin seeds instead of brown.

Is this rescuable in any way shape or form ? Otherwise it's just a waste of spice and time. Only about 50p worth of powder, so I'm not fussed about that, it's just I hate wasting things.

Pictures of Your Curries / Re: Lamb tikka madras

Certainly looks the part.

I made a turkey tikka madras (Chewy's madras recipe), a few days ago.  Had an initial taste, wasn't quite as good as my previous efforts, but having let it rest for a few hours it was much better.  (btw I was using turkey instead of chicken as ASDA were selling turkey legs very cheaply.

Well, to be fair the only Lidl chilled food dish I have tried is the lasagna, and it wasn't good (never had a good one from any supermarket).

Plus, ready meals from the main supermarkets which I have tried have mainly been disappointing... chicken like rubber etc.

I shop in Lidl quite often, so next time I am in I will buy a couple and try them out.  Hoping to be pleasantly surprised.

Always looking for good quality at low price, so I'm open to suggestions.

Having problems here imagining how it might be any good.

I like the bubbles.

Surprised at that. Wasn't the chicken rubbery and tasteless?
