Fair comment Phil, the tins are probably heat and pressure sterilized unlike the jars which all seem to contain acetic acid. I can't find any reference to the tins on the Pataks UK web site.

You won't get a commercial product containing garlic that is not frozen without an acidity regulator.

This is a list from Pataks madras sauce (not paste) jar:

Ingredients
Water, Tomato (20%), Onion (18%), Vegetable Oil, Modified Maize Starch, Spices (contains Mustard), Sugar, Concentrated Tomato Pur

Lets Talk Curry / Re: Death of the Taste

I had a balti chicken and pilau rice from Rafiq's (used to be Sheer Khan) in Liverpool St John's market for my lunch today.

For the first time I could definitely taste vinegar in this curry and I reckon it is from a Pataks product.
The curry tasted ok really but would have been nicer without the tarty vinegar taste.

These days I limit my salt intake to about 4 to 5 grams/day due to me being in the pre-hypertension category.
I agree that you get used to less salt and then some food can taste too salty. I've just done 2 weeks in Menorca and found chicken kebabs etc. to taste too salty for my new palette.

Then again I was eating some beans on toast at home and immediately noticed the beans tasted awful.
Sure enough my wife had bought the low salt/low sugar variety. I would rather eat them less often and enjoy them than eat beans that taste of cardboard.

Hi NJ, what oil are you using? Rapeseed oil (often just labelled vegetable oil and usually the cheapest) is notorious for going rancid easily. Maybe try sunflower oil or rice bran oil or even refined light olive oil which I've switched to recently, you can't taste the olives!
