I remember a base sauce I made a few times where whole spices were infused in water and added to the base sauce. I cannot remember whether it was from this site or RCR but it was pretty good and would love to try it again now that my cooking technique has improved.

Hi Nick,
This recipe and use of the spiced akhni stock came from the Curry Mahal restaurant in Sidcup, Kent many years ago.

Base Garabi.

Ingredients 1

1 kilo of peeled onions (chopped)
2 medium sized carrots (sliced)
0.5 of a green pepper (capsicum)(chopped)
1 heaped teaspoon of garlic paste
1 teaspoon of ginger paste
0.5 of a pint of veg oil
1 heaped tablespoon of veg ghee
1 heaped teaspoon of salt
1 heaped tablespoon of chopped fresh coriander
2 heaped teaspoons of dry fenugreek leaves (methi)
2 and 0.25 pints of water

Ingredients 2
To add later

1 heaped tablespoon of tomato paste
1 heaped teaspoon of coriander powder
1 teaspoon of turmeric powder
1 teaspoon of cumin powder
1 heaped teaspoon of any mild curry powder
0.5 teaspoon of chilli powder

Spice water ingredients

4 x bay leaves
2 x 1 inch pieces of cassia bark
5 x cardamon pods
4 x cloves
3/4 pint of water

Method

Put all Ingredients 1 into a large pan,
Bring to the boil, and boil gently for 50 minutes,
Once your base is boiling bring the Spice water ingredients to a gentle boil and cook for 30 minutes.

After 50 minutes cooking of the onions, add Ingredients 2 (tomato paste etc)
Now add the strained Spice water,
Simmer for another 15 minutes,
Allow to cool for a while and blend until smooth,

The consistency should be that of thin soup.
You can double up on all ingredients to make a greater amount of base garabi.

I met sean today who had a meal where i took some videos of curries being cooked by chance,we got chatting about videos and he mentioned he had filmed over 100 and invited me to come and view them at his house,he also mentioned he was on another site but left because he felt that he had no more input to give to the site,he did mention that he had left the sites logo on the establishment where he cooks as a gesture of where he first started out in his quest for indian cooking.

Following the advise of the good and great on this forum I shall keep my opinions to myself for fear of offending anyone. :P

Suffice it to say...what a fortunate chance meeting.

I ask the same question again. Will you post any of your videos for members to see?
Videos are a great help and although Sean's videos were good I didn't particularly learn anything new.

I hope your videos can help in my quest. ;D

I have heard people say that they believe tomatoes/paste go bitter if put in the gravy pot too early,
I can't say I've ever noticed a difference if added earlier or later.

Not really trying to do that CA.
I'm sure you realise that I don't need to explain myself to your good self.
I am merely trying to clarify if these were new videos or Seans videos (that if you recall) he didn't want cr0 members to see anyway.
I have no axe to grind with anyone, however I have expressed my thoughts without being rude to anyone and I would like to be proved wrong ;) that would be real cool...
Only clean washing around here!  :P

There really is no need for you to react that way, I have previously stated that if I am incorrect then I apologise and gave reasons for my thinking.
However, I don't think that you should deny members of this site your videos just because I questioned who you are.
If you have videos from a restaurant in Sidcup, then I too would be very interested in seeing them as I did get behind the scenes of a restaurant in the same area.
May I ask the name of the restaurant please?

Anyway NK, I think I've cleared that up for you so please post a video, I'm sure we'd all enjoy it.

If I have the wrong person then I apologise...
However when you read the following I'm sure you can understand how a mistake could have been made.

1. Sean seemed to have an issue with one of the moderators on RCR, using the same language ie "1 has spoilt it for the rest"

2. Sean had videos from the Jaflong restaurant...you said to Curryhell (earlier in the thread) that you had restaurant videos.

Would you please share some of the videos with the forum and tell us where they were filmed.
Videos from in the BIR kitchens are a great help and a lot of fun.

3. Sean's style of writing was the same as yours ie no punctuation or capital letters, which can make it difficult to read. Not that I care about your writing style but it can be a good identity marker.

Given all I have said, as I say I apologise if I'm incorrect.
Once again please share any videos you have and welcome to this forum.
