Thanks guys, that's given me some ideas. Will try subbing it in place of Worcestershire sauce, since a 150ml bottle of lea & Perrins costs the same as a 700ml bottle of Maggi in my local supermarket. Potentially a lot to be saved there as I get through Worcestershire like it's going out of fashion.

Picked up a bottle of "Liquid seasoning" by Maggi at the shops. Does anyone have recipes or use tips please? Not sure if it's used in BIR at all, anyone know?

To the OP - what quantity of onions are you using? You listed all your ingredients but just "onions" so its impossible to judge whether the recipe is anywhere close to the right balance of ingredients.  Too few onions in proportion to your other veg could give you a wrong flavour.

My other suggestion which you could try - see if discarding more of the root end of the onion helps with improving your results. The bitter flavour compounds are concentrated in the tough area towards the root end of the onion and although I would think they should get converted in the cooking process, maybe this is where your errant flavour is coming from.

Thanks Frank. Was simply cooked under the grill of a domestic oven, turning from time to time. Nothing fancy in technique but they came out ok. Might do it again at the weekend a I only got through half the curry sauce and still have half the peppers in the fridge.

Chicken tikka with curry sauce and rice. I was feeling hungry so used two chicken breasts per person, a bit greedy probably. Tikka was an improvised recipe based on Laziza tikka botti, bit of partake madras kebab paste, mint sauce, lemon juice, mustard oil and some red powder. Worked very well.

Hot dogs and chips. There's some ketchup and sweet mustard hiding under those onions.
