Sorry mate, I've only just seen this.

Rich is correct, it works much better with a bit more coriander powder than cumin. And he is also correct that too much cinnamon is not good.

I now fry a couple of bay leaves and a small stick of cinnamon for about 30 seconds, and then remove before adding the garlic/ginger. I'm sure it gives it a little something extra..............but I could be wrong..lol

As Chonk suggested, cloves can be added (Raj suggested this) haven't tried that one yet, but will give it a go. We add cardamom powder to ours.

I was always disappointed with the standard of curries along the curry mile, BUT I ate some of the best tandoori food I have ever had. Bearing in mind I left UK in 1996, my favourite eateries were:

Shere Khan (best seekh kebab and lamb chops I have EVER tasted,

Tandoori Kitchen, (Seekh kebab sandwiches made right before your eyes) no longer trading

ShahenShah

Shazam.

Apparently, according to family and friends there is a "new" curry mile that is better, cheaper and getting more and more popular and is in Longsight, along the A6 (Stockport Rd) near the big Asda.

WOW!!!!

We hear a lot of John Butler commercial stuff on radio over here. I didn't realise he can actually play. That was fantastic. I must make an effort to go watch them live next time they play.

I'd say the best curries i ever tasted were cooked on domestic gas stoves. Late 80's/early 90's Armadale Rd takeaway, Dukinfield, Manchester, and Scotland Hall Rd, Newton heath,Mmanchester.

Domestic cookers, aluminium frying pans, fresh oil. Food of the gods.

Biryani is my pet hate.

On a busy night when we get an order for biryani, I flip my lid and curse (Gordon Ramsay style) I feckin HATE biryani orders. Everything has to stop just to cook a bastad biryani.

I hate it so much that the next lot of menus we get printed, there won't be biryani on the menu. :o ;D
