Good effort! And well done to Ali for offering you some of his produce. Just checked his videos on YouTube to follow the process right through. Interesting that he doesn't blend the chillies once cooked, but keeps them whole in a jar and only blends them as and when needed. I wouldn't have thought it would make much of a difference, but I dare say he'll know his own business best.

Don't know if this is any use, UF, but Vah-Chef has a video recipe plus a couple of other written recipes on his site.

Never having seen let alone tasted a sambhar, I wouldn't know if the recipes are any good or not.

Would I be wrong in thinking that it is the ratios that are important rather than the means of measurement?

It seems reasonable to assume that one could replace the term "heaped chefs spoon" with tablespoon, dessertspoon, teaspoon, ounce, gram or whatever.

22 x curry powder
16 x coriander
15 x turmeric
12 x cumin
2 x chilli
0.5 x garam masala

It seems straightforward enough, so perhaps I am missing something.
