Curry Videos / CBM Little India Part 1

Hi All,
For those of you that don't venture onto RCR then here are a couple of overview videos from a new kitchen that I have gained access to.

The first video from Little India.

Just to make a few points........

This chef is very active in his pan and spoon action, bits of onions flying allover on occasions

You will notice debris under the burner range, this builds up during the evenings cooking. The trays are removed at the end of the night for cleaning. (Just in case anybody thought it was always like this  ::)

You will also notice his Sag Bhaji has no gravy at all added and the Mushroom Bhaji has the smallest amount.

You will see how dark the chef allows the residue in the pan to get, this is deliberate on his part. He did it with all the side dishes that I saw him cook. Having tasted a couple of them I can see why. They weren't burnt but had a fantastic smoky taste to them.

And watch for the the little mishap.............

I was however referring to the rcr promotional videos and google searches where they always come top.
I just wanted to give cr0 a bit of a leg-up.

As long as youre cool with it, i'll leave the vid as is.

P.S. I haven't a clue whose photo is whose or which are yours.

I am aware you meant the RCR stuff and not my own site hence my reference to 'the other site' as the two sites seem to refer to each other.

Going through 100's of photos coupled with using windows movie maker isn't much fun after many hours. In particular editing!
There is one pic with a blue background that looks photoshopped. I tried to replace that a few times but everytime i did, the music was all over the place. So it was left in.

There was a point when i reached UB's post on naans where he'd used your photos.
The upside down naan trick would've been a nice one to include but i thought better of using your pics.
It was a long old process and perhaps tiredness got the better of me.
Obviously something slipped through.

Just give me the nod and i'll delete the video.  ;)

As I have mentioned to another CR0 member...I have posted pictures and videos for all to see, that is my choice but seeking permission for them to be used elsewhere may have been better.
Having said that, it is a good production and well done to you for it.
I am certainly not going to ask you to remove the video.
I did however see the irony in using pictures from a member of 'the other site' to, as you say "Also, i was getting tired of the other forums videos etc always coming top in everything i searched when on a curry browsing mission.  >:("
At the end of the day, I am not one to perpetuate any further arguments between members of either forum.

Looking West over a little light pollution.
They are far enough apart in the sky not to be able to use my 20x zoom and capture all three in one shot with any greater clarity.

You have hills........lucky you. Not many of those here in the Fens. ::)

not just in the garam but in the base too as was suspected, but with a little twist ;D ;D.  They were boilded hard in water for some time, strained and the liquor then added to the base.  Clever way of doing it

It's good to see the use of 'spiced water'  or 'akhni' being used, you don't tend to hear of it much these days.

Hi Frank,
Could it have been Murgh Massalam or Kurzi Chicken or Royal Murgh,
all using a whole marinaded chicken or whole leg of lamb.

Hi Andy,
Yes I have and many times but to be honest, not for some time. There have just been too many other things to test.
I will revisit this base soon.
As I recall the whole spice stock does come through well in the end gravy but doesn't overpower the flavour in the base.
It is worth giving it a go Andy and reporting how you find it.
That would be real cool.
