Glad you're having success with JB's most excellent Gravy. I have not used any other recipe since JB posted this!!!

To be honest. I find the spicing subtle enough to make the gravy really versatile for just about any bir dish. You just have to tweak the recipe to allow for that.

Just out of interest, whats the name and location of the restaurant you refer to?

I know Im stating the obvious but.... I have ruined many a fine curry by adding too much tom puree especially the double concentrated stuff

Here we go again around the mulberry bush lol.
This debate has been going on as long as this forum has existed. Its got to be the 3rd  or 4th time - at least for me to listen to all this.
Unfortunately, most people on this site do not understand SS's/ Petes quest.
Unless you were eating  bir curries in the 80's, you've probably never tasted that illusive umami taste you could get back then. (the missing 5%).
Generally today, we can all give our local bir a run for their money with regard to what they now knock up, but compared to back in the golden years....... we dont even come close!!! Most of the top Bangladeshi Cooks were deported years ago

Undoubtedly the same is true of stuff like pataks.
I Only once made the mistake of using their pastes to make a curry.
Had such a horrible overpowering tang to it as well.

I would second that CT: Fresh is Best. Freshly ground spices also make an amazing difference.
The thing is though, if we are truly trying to replicate bir, then we need to use g&g paste just like the birs do.
I doubt many of them make their own. Im sure some probably do but I would imagine its more economical/easier to buy the ready prepared stuff
