I am very open minded, but to me all that onion (5 KG) with only 1 carrot and a quarter cabbage seems a little strange. No peppers, tomatoes etc......

As I say, I am open minded about this and I will certainly be one of your customers when the book comes out. I would love to know what you are putting in as the "magic" but I will have to wait like everyone else.

I understand that the longer you cook a base, the better it is. we once left a base cooking overnight on top of the tandoor, and it was absolutely the BEST base we have ever made, but we did have loads of other ingredients in there..ie tomatoes, celery, cabbage, peppers, carrots etc.

Hurry up with the book. 8)

We buy 20 kg tubs of ghee (butter) and we never refrigerate it..............no problem.

All i can say is that i am more than happy with the measly 3 and a half quid paid for each of Micks books. Both have been printed and bound in folders and sit happily with my other stuff for reference when needed.

Some really good recipes in vol 2. if you haven't tried, them....do it.

I can't imagine a curry without loads of chopped coriander on top, I LOVE the stuff, yep even on kormas and CTM's Chewy. ;)

I was never a rice fan at all.

If I go to a restaurant, i'll order a few tandoori dishes to be shared amongst the table guests, but for mains, i will order my chosen curry, and a naan bread. I may pinch a tablespoon of rice from someone in exchange for some bread.......

However, i must say, since we opened our shop, i have become addicted to our basmati rice. I don't know if it's available in UK. it's an aged basmati Indian rice called "Aeroplane LA Taste". It is so fragrant, with ultra long grains. I can (and often do) eat a bowl of this stuff on it's own.

Seriously, if can source this in UK, give it a go, I guarantee you will not be disapointed.
