We are back again to the old favourite secret base recipee....May I ask again, because I don't think anybody answered me last time I asked, did any body listen to the Indian guy (in India on the Delhi Belly programme) talking about cooking different curry bases and saying that he cooked them (or was it the currys) for hours on low heat?  I didn't fully concnetrate on those programmes because of the build up to the Wales v England rugby match. :-[  he seemed to think that it was important enough to mention.....

Did you hear that Indian chef talking about making the curry sauces......I think he said that he cooks for hours on low heat.....Interesting!

Sorry to digress.....but I notices CashNCurry's post above.....You mentioned that you will post some pics of Thai/Malay dishes.  Will you be posting recipees as well?  I love Thai food but never tried Malay......Cheers

It might be the same guy but it wasn't last October.  Yes, it was Saturday kitchen but it was quite a while ago....more like a year I think.  Anyway, thanks.

A slight digression.....I can remember around a year ago or so some Indian guy (forgett his name) appearing on Anthony Worral Thompson's cooking programme.  After the show, this Indina guy was availabe on-line for questions and answers.  Anyway, somewhere along the line, somebody asked him about where one could go and learn Indian cooking.  The anwer that was given according to a note I made at the time was Ballylamoe Indina Cooking School.  Amybody heard of it?  I am sure it was the Indian Chef guest who mentioned this although if you have 'attended' one of these on-line Q & A's, you will know that they can be quite chaotic and attract all manner of folk!!  Quite entertaining though.  Anybody else see that programme?

Does anybody know where KD is now?  Does she still run a restaurant.  Wouldn't it be great if she could be tracked down and got some in-put from her?

Just took some of the sauce out of the freezer and made the Madras (a toned down for heat version) for supper.......I was very pleased with the results.  Thank you Darthphall!
