Ray are those bags single use or washable?  They look a cut above the average freezer bag.

Phil & Axe I know the plastic tubs you mean  but I just like the lock & lock boxes, they're so easy to open and close and fully airtight when sealed.  I would tend to agree that buying 59 of them for

Lets Talk Curry / Storing base sauce portions

I've been freezing my base sauce in freezer bags but I'm finding that quite a messy solution when it comes to defrosting, not to mention the fact that over time I'm going to get through a lot of bags.

So I'm considering these Lock & Lock 350ml boxes to put 300ml portions of sauce in and freeze:

Does anyone else use similar?  Is 350ml a good capacity or do you find yourself freezing base sauce in larger portions?

I had a fun exchange of emails with the guy at Spices of India today over whether he will price match this site, but no joy.  Trouble is I'll have to order 59 of them to get the free delivery offer at

I had one of the 26cm ones on order from Amazon, but I have just cancelled it after watching the guy in Chutneys. I've ordered a 20cm one now which I appreciate is quite small but it is about what they were using there.

Trust me it'll be too small.  If it's not too small come back and tell me and I'll eat my words with veg ghee on, but I speak as a man who ordered a 20cm meyer commercialware aluminium HT pan by mistake (thinking it was the 26cm version) and you won't cook a takeaway sized portion of curry in one.  Remember the sides are tapered so the base dia is..... <trots off to kitchen with tape measure> ....only 15cm.  In the interests of science I just filled mine with water from a 1 litre measuring jug.  With water up to 1cm below the rim of the pan 300ml remained in the jug, so the workable capacity is no more than 700ml.  Anyone know the volume of a standard takeaway main dish foil tray?

Thanks SS that's reassuring.  I shall dishwash it with abandon.
Won't the unwashed part be rather too obvious when you take the band off ?
** Phil.
:D  Yeah, ok Phil.  Just for you I'll be sure to take the band off from time to time to prevent it leaving a mark!  ;D

Just reading the instruction leaflet which came with my Meyer Aluminium HT pan and it says "The following types of cookware are NOT suitable for dishwasher use:- Hard anodized aluminium cookware; Plain aluminium cookware"

But Razor dishwashes his with no apparent ill effects  ???

I'd be happy to join in a curry party if invited, but I guess Az has a conflict of interest preventing disclosure of too much inside info - think of the orders he might lose if we can all cook a perfect Chicken Roshney at home and don't need to buy from him!

Hi Stephen, I would like a copy if possible?  If I ever get around to videoing one of my curries it could make excellent soundtrack music.

Amazing how infectious enthusiasm can be - I'm seriously considering crawling out of the Natterjak burrow and making a 60 mile round trip down the M3 to pick up a Chicken Roshney from Chutneys!  Obviously once there I shall have to reveal to the staff that I'm another member of Chris's hot Roshney cult!

Chris - did you learn how to replicate the masala or is that a closely guarded secret?
