i have all this on another site where i have my own forum where you can view loads of my recipes and cooking techniques..this link should take you straight to it ..It was getting too difficult to work on this site that's why i left..it was heart attack material

Curry Videos / Glasgow 3.5 k recipe and video

3.5 killo onions chopped
1/2 litre vegetable oil
2.7litr's water
one side of green pepper chopped
50grams coconut cream
3 green chilli peppers chopped
2 medium tomatoes diced
1 handful fresh coriander
6 garlic cloves chopped
1 inch piece ginger chopped..or 1 table spoon garlic and ginger paste
1 table spoon salt
1 table spoon sugat
1 table spoon of garam masala
2 table spoons turmeric
1 table spoon cumin seeds
1 table spoon tomato puree
1 table spoon fenugreek leaves ( methi )

step 1..place onions in pot add cumin seeds and coriander and add water
cook for about 2 hours until soft..time may vary

step 2..add the rest of your ingredients and cook for another hour

step2...The sauce is now ready to blend cook for a further 2 hours on a low heat
until the sauce sweetens..keep tasting as you go along...when you get that sweet taste then it's ready

THIS BASE IS A CONCENTRATE..SHOULD BE THICK IN CONSISTENCY...Compare it to jar of curry cook in sauce, it's exactly the same...It will look even thicker the next day you go to use it but this normal just carry on as usual

You write "1.4 block creamed coconut" -> do you mean a 4" piece of creamed coconut of about 1cm width/thickness ? It sure looks more like it from the video. it's a 200 gram block i used 50 g..hope that helps

hopefully the witch hunt is over..when i first came to this site i had only been working in my local takeaway for about 2 weeks and i thought i had a rough idea how to make the sauce but i was way of track...it's took me about 5 months of researching and working in the shop to get it right..scaling down was the difficult bit.....the new improved recipe has only 3.5 killo of onions and 1/2 litre of oil....can't scale it down anymore than this....the final result is concentrate base sauce..watch my videos you will see what i mean.............Hopefully i'm no longer the bad guy on here, it was never my intention
