Do you use any sort of "heat spreading" attachment for simmering on the gas range?  I love cooking with gas, but when it comes to slow cooking beef curries for hours, results are sometimes not good because the small area of the pan covered by the flame.  I think I've seen attachments to spread the heat, sort of like wok rings I suppose.  Anyway, I'm sure it would help if my primary cooking pan was nicer.

CurryCanuck, those karais look great!  What do you use them for?  Can I ask where you got them?
I use a heat diffuser

For pots and pans I have a 32cm and 24cm non stick skk deep frying pans with lids, I have found them superb for sweating onions and doing rice by absorbtion

Ah yes, I thought the handle was for the grinding. Im after one that doesnt cause too much friction like electric bladed coffee grinders for example.

FYI I've started removing negative posts (and replies to such so the thread retains its integrity).

To be clear constructive criticism/debate/disagreement is fine but where a post exists solely to attack another member it will be removed.

Oh no!  I enter a thread titled "Copyright Issues, pirating" and get greeted with a discussion on Asian mates in Abu Dhabi and how much experience is needed to cook a curry!!!!  :o

Why can't people stick to the topic of the thread!  Why not start a new thread guys?  Maybe title it "how much experience is need to cook a decent curry"?  I dunno?

Why don't moderators encourage this?

Maybe people would then be able to better find what they are looking for it!?

Sorry to harp on guys, but crikey!? ::)  ;)
I dont think its an issue personally. I guess it depends on whether we are trying to create a clear concise online guide or engage in debate/discussion.

My feeling is the former benefits occasional users, the later benefits the more dedicated users who will read every post anyway.

I prefer the forum favouring the later.

And shouldnt you have posted this in a separate thread titled "keeping threads on topic" to discuss this  ;)

And to be honest following a recipe wont let you recreate a BIR dish, you also need years of experience and technique (which I believe personally I am now at the stage where I have just advanced from scratching the surface)
