I wished I had asked this question because I've often wondered if the ginger is really needed as it's already in most bases. Ginger can be quite overpowering. In CBM's recipies it's hardly used as a combination, he just adds the garlic paste.
I look forward to your reply Chris because I'm sure this is a key stage in the finished curry, although I'm most probably completely off the mark.

Thanks for the link Phil, but I've ordered some from Spices Of India, (http://www.spicesofindia.co.uk/acatalog/MDH-Fish-Masala.html) I like the look of the recipe in the video and I love fish curries so I'm interested to try this.

Yeah, it can be if you go by the top chefs, triple cooked chips? what's all that about? 
Medium sized chips, not too thick, and a cheap olive oil, sprinkle of salt, ... sorted  :)

solarsplace, that dish looks absolutely top notch  :)  It looks perfect.
I think CT's vids and recipes are the dogs whatsits. He puts his recipes where his mouth is  ;)
