I am with Matt on this.  The flavour is dramatically different for me.  I would not go down the substitute route as you will end up ruining a good curry if you get it wrong.  I would wait to get the leaves :)

It seems a really small chefspoon that he is using at 2TBSP????  I went wrong because of this and added 3.5tbsp of each and got an overspiced base  :( These bloody chefspoon measures >:(

Not sure I can be bothered trying it again.  It would feel like building a wall, knocking it down, then having to rebuild it!

I use the mayflower mix with the addition of five spice when i run out of the home made paste and it is spot on.  also get from farmfoods!

I have to declare an interest here, since the fact of there being 21 times as many words which break the "rule" as obey it came from me. (Using a Scrabble word list, and with technical help from my stepdaughter and from Davini994, who used to be a regular on these forums.)

And what we found was 923 words which have <cie>, 2,606 words which have <ei> after something other than <c>, and just 167 words which really do have <cei>. (Of which only six are really in everyday use.)

Hi All

In my pursuit of being able to cook a full curry menu to a good standard, my next curry of choice is a BHUNA!

I like to do my own group tests on 5 or 6 well recieved recipes to decide which one suits my palate.  What would anyone recommend.  Not any average ones but takeaway beating ones!

I am going to make my own, 976's, CA's and any others that can be recommended!

Having not had a bhuna for ages i got one last night from my local TA which does a fine rogan josh so I keep going back.  The bhuna was bland and had far too much sauce for a bhuna.  Disappointment :(.  Just goes to show that although you think your favourite takeaway is good, their will be dishes from their menu that you do not rate!!!

The important thing is to very slightly undercook them as they will cook a bit as they warm up in the sauce, and put on a very gentle rolling simmer as not to break up the starch molecules too much!
