i made a chicken bhuna last week and it isnt very tasty.cant seem to get it right the flavour,i have tried with and without the chilli,any help would be appreciated.i am making one for tonights dinner.the recipe i have is the one that bruce edwards has.for bhoona/rogan josh

thanks for all your help,its bruce edwards bhoons recipe i am using.made it on friday night and it was tasteless.i used 1 heaped tsp of mild mixture.thought i would add some chilli powder to it,nearly burnt the mouth of myself.lol

i am looking for all the ingredients for a chicken bhuna,how much goes in etc etc,i have just made one there for the first time,its tasteless but the colour is there.i made everything from scratch,the base,the spice mix and also the curry powder.so why hasnt it turned out like the local indian takeaways,i just ate it anyway and wish i hadnt added the chilli powder,feeling hot,hot,hot now.lol

Well, check the specific recipe MB!  But, generally, about 1 to 2 tsp per serving.

You put in the specified quantity of spice mix (which may contain curry powder) or you put in both the spice mix and curry powder if the recipe specifies to add both.

Which recipe are you referring to MB?
the bhuna recipe-says 1 heaped tsp of mild mixture,doesnt say add the spice mix,

please can anyone help me here,i have made a batch of curry base,also made the spice mix and also the ingredients that make up the curry powder.how much do you put in when i am going to make my first home-made indian curry,my mouth is watering here thinking about it,mmmm,yummy.

i know you add the spice mix but how much do u add,is it a little  or is it the lot of it.whats in the spice mix is also in the curry powder mix.this is where it is confusing me.for instance the bhuna recipe is 1 heaped tsp mild mixture.so what i am trying to say is,do you put the mild mixture in along with the spice mix.

Boil up everything except the spices, once boiling add the spices and stir in.

Blend the mixture with some added water.
Return to the pot and cook again, adding boiling water to get the right consistency.? It should be runny.
Keep cooking until the oil separates.

The Vindaloo:
3 tbsp Veg oil (approx, if you like it oily add more)
1 tsp Garlic & Ginger puree
Half a tbsp Tomato puree
3 or 4 tsp Chili powder?
Tsp Curry Powder (mix)
6 Ladles of gravy
Small handful of chopped coriander (include the stalk)
Salt to taste
Pre-cooked chicken or meat?

Heat the oil and fry the garlic and ginger puree. Add the tomato puree and fry for a minute. Add the chili powder and curry powder, cook for a further minute. Add a ladle of curry gravy and cook through, add the rest of the gravy. Add chicken and allow to simmer.
Just before serving sprinkle in the chopped coriander and stir in.
