Brill Darth,

Unfortunately I can't take any photos because the batteries in the camera are dead.  I'll let you know how it turns out and any variations on the recipes.

Hi all,

It's my sons 16th birthday and he wants me to make a curry.  He wants something like a korma in texture (ie creamy) but with a bit more flavour and a bit of a kick.

Any one got any ideas/recipes for me.  I will be making a new batch of base sauce tonight, possibly Darth's or I might try the Bruce Edwards one for the first time.

Going to be a busy day with naan and pakoras to do too (must clean the fryer)

Maybe she "accidently" forgot to mention the fact the recipe was Darth's from this site when she first posted it, or maybe not.

In any case, I agree that we should possibly give her the benefit of the doubt now and ask her to join us and share any knowledge she has if she did indeed work in a takeaway for three months.  If she did this I am sure we would all welcome her to our hapy little group.

I couldn't believe it when I saw the post on the bbc, which is why I had to reply and let Darth know.

I only made darth's base and madras for the first time the other day and it went down a storm with the people I was cooking for.  Told them where I got the recipe from too as well as various people in the UK when I was back in July.

What a cheek though, copy and pasting direct from here with the same formatting and everything!!

Admin, I know various sites that I can recommend the site on here in France (where the curries are awful), so I will start getting the site listed on them.  I'd put one on my own but as I'm a web designer and that is what my site is about I don't think that'll help with your page rank (I have a 4 for mine).  Saying that, I am thinking of a links page that will have IT related stuff and usefull links for the expat over here so you never know.

Right, it's been a while, but here is one of the recipes for poppadums from the book I mentioned.

Spiced lentil papadums

Ingredients:

25g/1oz split black beans, ground
15 black pepercorns, coarsly ground
1.5ml/1/4 tsp ground red chilli
salt
100ml/3 1/2 fl oz/6 1/2 tbsp water

Method

Place all the ingredients in a pan and cook over a medium heat for 3 minutes until the water has been absorbed.

Leave to cool slightly then shape into 8 equal portions.

oil two freezer bags

Roll, 1 portion into a ball, place on a large plastic bag (freezer bag) and cover with the second.

Roll into 10cm /4 in circle.

Remove top bag and smear with oil.

Repeat with other balls of dough.

Leave exposed to the air for 1 day to dry out.

Place papadums on greased baking trays and place in oven about 30cm / 12 in above the pilot light. Leave for 3 days to dry out completely. 

When dry store in an airtight container.

Fry as normal.

I haven't tried these yet, so don't know how good they are.  It sems a bit of hassle to do (especially the three days in the oven bit), but one day I'll get round to it.  We have had temperatures in teh high 40's here so I reckon just leaving them out in the kitchen would work.

It has various poppadum recipes in there. Might be difficult in the UK though. I'm going to try some in the next months down here in France where I can air dry them properly.

I might try to post some of the recipes later when I have more time
