1/ In the ingredients for the chefs spice mix it states to use curry powder. Is this down to choice our should i use a certain type ?

2/ I am going to make Admins new base sauce and then his Madras curry from the same post, but would like to no if i can add fresh chilli to this recipe if so when is the best time to add them.

I am going to start by making the new base sauce posted by Admin and then follow his madras recipe ;D and see how i get on. I will have to do a big shop 1st to get all the stuff in then its all go. Will take some photos of the base and the madras when its done and post them up.

I have just joined and the site looks great my name is Dai and i am from Wales (UK). I have a lot to learn but this looks like the best place to start.
