Thanks for both replies.....I found this one last night. Going to try later today :

This rub will give fish or poultry an authentic Indian flavor that is as colorful as it is tasty. This rub is a little spicy so if you want to reduce the heat, cut the cayenne in half.
Prep Time: 10 minutes
Total Time: 10 minutes
Yield: Makes about 1/2 cup
Ingredients:

    1 tablespoon ginger
    1 tablespoon cumin
    1 tablespoon coriander
    1 tablespoon paprika
    1 tablespoon turmeric
    1 tablespoon salt
    1 tablespoon cayenne

Lets Talk Curry / Spice mix rub / coating for chicken

Hi all,

We tried one of these Maggi powder mixes for cook in bag chicken. It went down well. Living in a remote area they are not easy to come by. Has anyone a recipe for a spice mix for chicken I can cook in roasting bag or even BBQ ?

My Chewys Madras is always a winner.

I cheat slightly and make a base sauce I got from my usual take away !

Use Chewys ingredients though. Always a winner when tweaked to personal taste....salt, sugar, amount of spice mix.

Recommended.

Up to this point being a relative newbie I have used

No disrespect to anyone else, just have not got there yet !

Not a great deal of difference I find....all first class, but I find when asked for a Tsp. I put in a Dsp.

Does make a difference. Larger, more whole flavour.

Missus likes rice and I like naan or chapati so I make this with 500ml base sauce. The rice sucks it up  !!

I too made a Madras today from CA's recipe. Different sauce though. Turned out spot on !!!

His jalfrezi also hits the spot.
