Had to borrow it off my dad if I'm honest! The biggest pot I had held about 4 litres. This did the job spot on.

Unlike some of the others my base sauce did have a bit of a spice 'tang' to it. Nothing major but you could certainly taste them - not the onion water that most have seemed to suggest.

One other thing - I'm planning on freezing this base for future use - what portion sizes do people recommend dividing the base into for freezing. I don't mind how many bags I end up using, but it'd be good to get a point where 1 bag = 1 portion size, therefore if I'm cooking for more, I just defrost the relevant number of bags rather than a bag and a half or something!

One question - the mixed powder guide that youve put up - does that effectively come to the 2 tbsp needed?

Crisis averted.

I've bought some Kasmeri Chilli Powder - after watching ChewyTikkas Madras video I can see I'll probably need to use it quite a bit so I travelled through to Sunderland during my lunch hour at work and got some (my work is a lot closer than 27 miles!).

Base sauce here I come!

Hi Hilly, any chilli powder you can get your hands on will do. I'd steer clear of extra hot as you'll be limited to what you can make with a hot base. I use Eastern Kashmiri Chilli powder, great colour & flavour. I can put a fair amount in & get plenty of chilli flavour while controlling the heat. Another idea as has been mentioned many times on here is not to use chilli in your base at all, only adding it at the dish stage

Thanks for that mate - saves me having to fork out a bit to get it delivered via the net because if I'm honest I haven't a clue where my nearest Asian Shop is.

Had a bit of a search on Google Maps but the nearest one it's saying is in Sunderland (28 miles away!)

To be honest I'm just talking Sainsburys own chilli powder that comes in a spice jar.

I'll be using it for a base sauce but depending on the other currys I make from it - I suppose i might need it again e.g. Korma, Madras, Ceylon etc...

Hi guys,

First post so please bear with me! Today I went out and got nearly all the ingredients I need to make ChewTikkas base sauce after reading the instructions / rave reviews.

However I couldn't find any Kasmeri Chilli Powder for love nor money. Now... my question is, should I buy some via the internet and wait for it to arrive, or can I use normal chilli powder instead as a substitue i.e. the stuff that comes in the spice jars.

Sorry if this appears to be a silly question - if the difference is massive, then I'll order some now, but it just seems a shame to pay all that extra money for delivery etc... if I can get much of the same experience from normal chilli powder.
