I bought the book last week.  Main reason for getting it was due it being written by the owner of one of the BIR in my local towns.  My copy is even signed by him  :)

I've used the C2GO base and made some really great curries.  Previously I've used CAs base again with great success.

This week I've tried a base from a new book, Curry Craft, released in December by the owner of a local BIR in my town.  Made a jalfrezi and rogan josh tonight using it.  Jalfrazi was nice but my wife said the rogan josh wasn't as nice as usual.

Will try a madras next with this new base to see how that goes.  If not too good then will go back to C2GO or CAs base.

Pictures of Your Curries / Last nights tea

Made Curry2Go Chicken Madras for me and Curry2Go Chicken Rogan Josh for the wife last night.

Both of these used Curry2Go base and CA mix powder.

I made a couple of slight differences to each recipe.  I used pre cooked chicken tikka for both.

With Madras I added 2 tbl spoon of fine chopped onion, 1 tbl spoon fine chopped green pepper and 1 tea spoon methi leaves.  I also added more chopped coriander than the recipe stated.
Result - one of the best curry's Ive made and very nearly matched the taste from local TA.  Wasnt as oily or spicy as TA version and not as saucy but that was due to me not having quite enough base gravy.  Will double amount chilli powder next time.  Also didnt get the same smell as TA.

Rogan Josh - also added 1 tbl spoon onion and used more red & green peppers as my wife prefers more of these in it.  I also added 1 tea spoon fresh ground fennel seed.
Result - no complaints from wife so must be a result  :)

Sorry but no pics.  Was so keen to tuck in and try it forgot to take any.  Next time I will.

Will try some of the other madras recipes you mention but they have a lot to live up to    ;)  ;)  ;)

Also want to try a jalfrazi - any recommendations on best recipe for this?

BIR Main Dishes Chat / Curryhells madras
November 03, 2012, 08:53 PM
Having made mainly rogan josh (wife's favourite) since joining this forum I thought I would try a different curry for myself.

I've not had a madras for ages so decided to try it tonight.  I used curryhells recipe (thanks Dave for the recipe) with CAs base and mix powder.

The result - whilst cooking it I tried a little and it didn't taste right but after a few more minutes the sauce thickened and it was time to try it.  Wow, best curry I've cooked yet.  Very close to most of the madras I've had from BIR.  I did add a couple of drops of lemon juice which wasn't in the recipe but don't think I will add it again as I'm not sure it gave anything.  I did add a tsp mango chutney as per recipe and it did give a slightly sweet taste to it which I think helped to the overall taste.

I've been using pilau rice from this post https://curry-recipes.co.uk/curry/index.php?topic=396.0 and its very close to the rice from my local TA.  I think I added to much cumin seed tonight which did overpower it slightly.

Back to the madras, will definitely cook this recipe again but may try some other madras recipes from this recipe.

Thanks again curryhell for this recipe.

Madras / Re: OH that AROMA!! After so long

I have been really pleased with my efforts recently until I had a take away tonight.  My speciality is chicken tikka rogan josh which my wife really likes.  However tonight she ordered the same and I lamb tikka jalfrazi.  The smell in the car and whilst eating was nowhere near when I cook a curry and the taste different.

However, the TA was way more oily than mine and tasting the oil it was really spicy and to me had "the taste".

I am still really impressed with the knowledge on this site and in one way the currys I've cooked from this site are different from my TA but that doesn't mean they are worse.  In some ways I think they are better cuz they are not so oily and I feel I taste the individual ingredients whereas with a TA I can't always.

We keep trying and learning and as long as I enjoy both my own curries and TA ones then I'm happy.

CA, made your base and spiced oil today then followed through with a Jalfrezi - Was lovely!

Have you ever attempted a Rogan Josh with this base at all?

djreaper - I use CAs base with curry2go Rogan Josh recipe (with a couple of slight changes) and am really pleased with it.  The wife says its nearly as good as the local TA so that will do for me  :)
