I couldnt seem to find this stuff in any of the 3 Asian shops i use (at first) , then i asked and it always seems to be shelved in the least obvious place and it is actually sold in all 3!!! lol.......that said it isnt in a bag it always seems to be in a box and MDH brand. hope this helps as it does make a difference.

From my very limited experience id go for Dipurajas, ive changed a few things from the original , like a level dessert spoon of sugar added and a resimmer after the initial blending for around 20/30mins skimmiing scum off the top not froth.
Ive made this base 4 times now so i have a good idea about what i like i also add around a pint of water after simmering the second time around (just a side note i use a pan with the little steam hole in ) after all of this i get around 3 Litres of base.
Ive used this base with :- Dips Chicken tikka Balti,Dips tikka massala,Razors Chiken tikka Jalfrezi and Chewys Lunch Madras, all have turned out better than expected :D
Hope this helps you in your choice.

Hi guys with the recent addition of IFINDFORU's spice mix i couldnt help but noticing that all the key elements are the same as DIPS ive been using Dips base and spice mix now for the last 2 months and ill have to say its BIR (well to my taste buds anyways), ive made Chewys madras with it and just added salt,Kashmiri Mirch and sugar all i can say is awesome!!!!
The two things that i have changed about Dips recipes are the salt levels and the method with which he cooks the base gravy, ive adopted chewys re cooking after blending method and also added 1 level tbs of sugar and for my ten penneth ive cracked it :D , i dont want to stand in the way of progress but i feel we all ready had a decent spice mix it had just been overlooked .

December 18, 2011, 09:30 AM
Hi guys dunno if this has been done before or mentioned in other posts im just adding a small list of Indian/Asian shops ive been to so far, could be helpful to anyone near Stoke or Manchester.

:- PAKS foods http://www.pakfoods.net/ i used the store in Stoke and found it had everything ive needed so far also a handy halal butchers at the back
Address :-Address:50 STOKE ROAD, SHELTON ST4 2QX, they also have shops in Derby,2 in Leicester and Nottingham.

Worldwide foods : 24 Slade Lane, Manchester, Greater Manchester M13 0QE, this was the first store i used for spices ,they stock everything you need and are very fairly priced , the halal butchers at the back is the best ive seen so far.

Kashco  :Liberty House  35-37 Slade Lane, Manchester M13 0QJ, another Manchester based store just up the road from Worldwide again they seem to stock everything a few pence dearer than worldwide but more organised, also a Halal butchers attached.

A.S.M. Indian Grocery Ltd :Address:      75-83 Oldham Road, Ashton-under-Lyne, Lancashire. OL6 7DF,visited this shop yesterday for the first time (thanks to Razor for the heads up), they have everything you could possibly need ,i was especially pleased by the way they do ready packed chillies /peppers/toms all for a vey fair price, no butchers attached but a Indian boutique ,which the mrs liked and a cafe nextdoor.

Hope some of you find this post helpful and maybe we could start a list of , or is there already one!!!  :o

December 16, 2011, 08:15 PM
Made this tonight instead of chewys madras (didnt have any MIRCH), all i can say is shllluuurrrrppp!!!! , used Dips base n spice mix, didnt have any onion paste but the taste seemed fine without, i had to add around half a teaspoon to a full teaspoon of salt to suit my taste, my only mistake was using small cherry tomatoes which disappeared during the cooking, ill deffo be having a bash at your onion paste now :D , cheers for the recipe :D
