I must say,ca's korma is still my goto recipe if anyone ever fancies a korma.
That said, the youtube video was very awkward to watch.Should have employed some editing skills.

Curry Base Chat / Re: Turmeric in the initial boil
January 27, 2016, 01:41 PM
Hello stephen.
Sorry,My fault for not being overly clear.
I didnt mean omit  the turmeric  completely.  I was talking about when the onions are boiling up for the 1st hr or so.
Ive seen some bases that have the turmeric added at this point (jb's restraunt base).Chewy's adds his turmeric  (spice mix) after the onions are melted.
Maybe im being too pedantic.

Curry Base Chat / Turmeric in the initial boil
December 28, 2015, 12:41 PM
Hello chaps.Returing to the curry quest after a break.
Quick question: I've seen a few base gravy recipes that call for Turmeric to be added  in the initial boil (ie the onion, carrot, ,pepper, , tomato stage) what's the reasoning behind this, and is there any noticeable difference in adding Turmeric at this early stage?
I've noted Turmeric is also added again during the inclusion  of the spice mix.
I'm going to be cooking a pot of Chewy's base, which has always delivered well in the past.Wondering if I should add some turmeric for the boil.
Thanks for any help.

Madras / Re: JB's chicken madras

Thanks jb, will be giving this a try later. Just a little clarification: would fenugreek be a large pinch? And a ladle is..150mls?
Does that sound right?
Cheers

Wasn't h4ppy Chris banging on about adding an elusive final secret ingredient to the final base/curry?
But joking aside, thank you for unselfishly passing on your newly acquired knowledge.
Exciting times

What a great opening post . Welcome along, Dann , and I hope you find what you're looking for.
Regarding the Advocaat,I may well give that a go;we've had a bottle just sitting in the cupboard for the past 26 years gathering dust, so why not.

With its wealth of written confusion,  Dave's undercover  cookbook lead me directly to the front door of this very website.
Unfortunately nowadays its only one remaining use is  propping up my workbench in the shed, but apart from that, he really does himself no favours in that video.
I did giggle at the accusation- 'You pinched my spiced oil and I still have the Emails'.
Priceless.
