I have to improvise somehow as my local shops (including Asian supermarkets) do not have any paste and I need it tomorrow

I have fresh ginger and garlic so could make some fresh. Does anyone have an idea or help? I did search for it on here but couldn't find any recipes for it.

Just a little about me. 40 years old living in South of France- huge lack of curry houses here so we rely on 1 or 2 overpriced restaurants on the coast.

Normally make 2 curries a week at home and not bad at all but loving the look of everything here so far. Favourite is Vindaloo with mushroom sidedish...
