Supplementary Recipes Chat / Tandoori masala..

Hi every one, i made a simple home curry last night, i havent got any base sauce left so i just knocked a home style curry up, to the tarka i decided to use tandoori masala which i have never used before and it gave it a great taste, i used it alnog side cumin, corriander and chili.

I never see recipes using it in the main dish as a spice, is it used regular in main dishes as a main spice or is there a reason why it isnt.

All Other Hints N Tips / Tamarind Concentrate

Hi, i was wondering if any one could help me, i have a recipe that calls for 1 tbsp of Tamarind Concentrate, i have a jar of this, this is the exact one i have.



Does this stuff need to be diluted with water or do i use it straight, ive never used it before and read on the internet that it is diluted sometimes, the recipe dosent say it just simply says use 1 tbsp.

Any help much appreciated, thanks guys  8)

Hey everyone, i have got a load of base left from making the bruce edwards one a few weeks back.

Im looking to do one of these two recipies tomo but have a few questions.

1. I want to use this recipe but with the bruce base, im sure it would work ok but dont know how much i should use, can any one recomend how much, here is the recipie.

What is meant by " Add ladle of base sauce and evaporate off" ???

3. Finally, when he refure's to at the start, heat base sauce , is that all of the 3 laddles full, then reserve after cooking chicken to add back later on.

I also dont know how much in sauce to use as it dosent state what size laddle is used and im not experienced enough to have a guess.?@?

Id be very gratefull if any one could help me on any of these questions.

Hi everyone, only just found this site and am very keen to have a go at making a base sauce.

Ive found the bruce edwards one but have a few novice questions i hope some one can clear up for me, bear with me as like i said this is all new to me and im keen to learn.

the part that reads:

What does this mean ?



Next question is once i have made the gravy and its cold, do i just use it in a
recipie cold, say straight out of the fridge in to the dish im cooking following instructions, or does it need to be heated first?

Final question, the second part where it says to:


Not essential but improves flavour

Set aside 1 litre of Base Gravy (freeze for future use) and keep remaining 3 litre?s
Heat 5 fl oz?s Veg Oil in large pot
Add 1 Tbsp Tom Puree, stir for 1 min
Add the 3 litres of the Curry Gravy and 1 litre hot Water, stir well
Bring to boil and simmer until Oil rises to surface
It will turn slightly brown
Stop stirring to allow Oil to separate
Use at once
Will keep a week in fridge

Do people recomend to do this or not?


Hope some kind person will help me out as im really looking forward to learning how to do this and making some great currys.
