Lets Talk Curry / I'm a 'curry wimp'
July 19, 2014, 12:30 AM
It's true.  I can't take madras, let alone vindaloo, tindaloo, phal or the infamous chicken ring-stinger.  i'm a bhuna man.  dopiaza, masala all fine by me.  i might go crazy with a rogan josh every now and then but it's rare.  however, i LOVE curry.  finding this site has been my ultimate in internet pleasure and that's saying something  ;)  i made my fave bhuna recipe on here tonight.  i usually cook with prawns or quorn but i've recently dabbled with mutton.  first time, amazing curry but mutton a bit tough.  tonight, mutton cooked in newly purchased slow cooker so better, curry too hot.  only difference?  swapping half a teaspoon of mild chilli with 1 kenyan green chilli.  so next time it's back to the mild chilli powder combined with the new slow cooked mutton... happy days for a curry wimp :)

i've been making the bir curries using recipes from this site and they're the best i've ever done.  so, i've been trying my hand at more trad indian.  using a couple of cookbooks but they just end up being bland and watery.  everything seems to be going ok til it gets to the 'add water' stage.  any tips?

I've been reading this site for a few weeks and making some of the curries which have been fantastic.  always loved indian food but like you lot, always struggled to make something similar to what I loved at my fave restaurant.  I've been going to the same indian restaurant for 24 years, my folks used to go before me, and i actually went last night and was not as impressed as i now can make better!!!  this is a good thing :)  been using this base http://cbm-mick.blogspot.co.uk/2010/03/my-book-base-gravy.html and then made the bhuna (finally cracked it) recipe and it was stunning.  gonna post more as i get more into it.  i have the 'curry secret' book so will experiment with those recipes with Mick's base.

talking about curry is the first step to making a curry, even when not hungry so i'll give it up for now.  Peace and poppodoms x
