I found a little gem of a book at my local supermarket for only ?3 Indian made simple from Love Food I have made four of the recipes all delicious probably more veering to traditional rather than BIR styles most of the dishes start with frying  chopped onions so what I am thinking to save time is making a batch of base just using onions oil and water would this work when making the recipes and letting the water evaporate off   before adding the spices GG paste etc ?

I have just watch the vid on making a staff curry the recipe starts with Indian bay leaves just wondering if anything could be used as a alternative ?

I have about 2 litres of frozen base just wondering if a made a few main dishes using the base is it safe to freeze the meals ?

Ok I have the family coming NYD and I have decided to cook a Indian-fest a couple of traditional Indian recipes which I have made in the past along with a few BIR,s the TIR,s is the easy part all cooked in a big pot but not too sure whether to cook the BIR,s in advance and just warm up or to cook when guests are here ? BTW I am cooking my first  BIR base tomorrow will let you know how I get on .

I must admit I am partial to the Cajun and Creole cuisine fell in love with it when I used to visit my aunt in Arkansas I know before anyone says it she lived 5 miles away from the Louisiana border , has anyone else tried cooking southern style ?

I have noticed that a lot of recipes in the BIR style contains curry powder does anyone make their powder or is it mainly shop bought ? I am thinking of making my own while I have the spices to do it

Hi everyone I am glad I found this site and looking forward to try a lot of recipes I been recently making my curries from scratch grinding spices and so on but been following the more traditional way rather than the BIR methods didnt realise how split it can be but making interesting reading . I have seen a lot of recipes which I would like to try but the downer a quite a few call for coconut and coconut milk something I detest so is there anything I could use instead ? .I know I am going to enjoy this site  :)
