Made Curry2Go Chicken Madras for me and Curry2Go Chicken Rogan Josh for the wife last night.

Both of these used Curry2Go base and CA mix powder.

I made a couple of slight differences to each recipe.  I used pre cooked chicken tikka for both.

With Madras I added 2 tbl spoon of fine chopped onion, 1 tbl spoon fine chopped green pepper and 1 tea spoon methi leaves.  I also added more chopped coriander than the recipe stated.
Result - one of the best curry's Ive made and very nearly matched the taste from local TA.  Wasnt as oily or spicy as TA version and not as saucy but that was due to me not having quite enough base gravy.  Will double amount chilli powder next time.  Also didnt get the same smell as TA.

Rogan Josh - also added 1 tbl spoon onion and used more red & green peppers as my wife prefers more of these in it.  I also added 1 tea spoon fresh ground fennel seed.
Result - no complaints from wife so must be a result  :)

BIR Main Dishes Chat / Curryhells madras

Having made mainly rogan josh (wife's favourite) since joining this forum I thought I would try a different curry for myself.

I've not had a madras for ages so decided to try it tonight.  I used curryhells recipe (thanks Dave for the recipe) with CAs base and mix powder.

The result - whilst cooking it I tried a little and it didn't taste right but after a few more minutes the sauce thickened and it was time to try it.  Wow, best curry I've cooked yet.  Very close to most of the madras I've had from BIR.  I did add a couple of drops of lemon juice which wasn't in the recipe but don't think I will add it again as I'm not sure it gave anything.  I did add a tsp mango chutney as per recipe and it did give a slightly sweet taste to it which I think helped to the overall taste.

I've been using pilau rice from this post https://curry-recipes.co.uk/curry/index.php?topic=396.0 and its very close to the rice from my local TA.  I think I added to much cumin seed tonight which did overpower it slightly.

Back to the madras, will definitely cook this recipe again but may try some other madras recipes from this recipe.

Lets Talk Curry / Tandoori ovens in winter

Am thinking of getting a tandoori oven and was wondering if anyone who has one uses it in winter outside or are they just a summer (what summer) thing?

seems alot of money if they can only be used in dry/warm weather.

Anyone got a recipe for lamb/chicken green masala?  Its one of my favs at my local indian and would like to try it at home.
