Hi Guys ive been watching the Rick Stein series and its given me a few ideas so heres a curry i made the other night magpieing ideas from all over the website.

INGRIDIENTS.

2 Medium red onions finely sliced.
6/8 Chilles chopped coarsely.
One whole bulb of rose garlic chopped as thin as poss.
About the same amount of fresh ginger finely chopped.
Full punnet of cherry tomatoes blended.
Handfull of fresh chopped corriander.
Half/to full teaspoon of Black mustard seeds.
2/3 tablespoons of mustard oil.
2 heaped teaspoons of Dipurajas spice mix.
1tsp of salt.
1tsp of sugar.
1tsp of methi.
1 level tsp of Tandoori massala.

METHOD

Blend tomatoes and add tandoori masala and mix.
Heat oil in a pan and add the mustard seeds and wait for them to start fizzing.
Add the chopped onions and fry for around 10/20 mins until golden brown (not burned)
Add the garlic/ginger and fry for around another 5 mins constantly stirring and adding a little water so as it doesnt burn.
Add the chillies fry for another 2/3 mins.
Now add the spice mix,Sugar,Salt and methi stir in thoroughly add a little water if it goes dry.
Next the blended tomatoes.
now add the corriander.
i then left on a low heat with a lid on for around 30mins then let it cool.

i served this up with a side of Dipurajas Seek kebab and in my opinion it was Awesome.

Hi guys
id read a few threads on here a few weeks back regarding Madhur Jaffreys curry nation , i watched everyone of the episodes with great pleasure , this recipe http://uktv.co.uk/food/recipe/aid/653614 stood out from the rest for me , so the next day i had a go at making it, all i can say is WOW !!!
     Im not usually am authentic curry man but this is well worth the effort , heres a few tips before you try, id cook the lamb meatballs off a little before putting them into the curry as mine ended up very laden with lamb fat and had to spoon it off !! as with all curries it tasted better the next day and the Mrs had it for tea 3 nights running lol.

Cooking Equipment / Indian /Asian grocery shops

Hi guys dunno if this has been done before or mentioned in other posts im just adding a small list of Indian/Asian shops ive been to so far, could be helpful to anyone near Stoke or Manchester.

:- PAKS foods http://www.pakfoods.net/ i used the store in Stoke and found it had everything ive needed so far also a handy halal butchers at the back
Address :-Address:50 STOKE ROAD, SHELTON ST4 2QX, they also have shops in Derby,2 in Leicester and Nottingham.

Worldwide foods : 24 Slade Lane, Manchester, Greater Manchester M13 0QE, this was the first store i used for spices ,they stock everything you need and are very fairly priced , the halal butchers at the back is the best ive seen so far.

Kashco  :Liberty House  35-37 Slade Lane, Manchester M13 0QJ, another Manchester based store just up the road from Worldwide again they seem to stock everything a few pence dearer than worldwide but more organised, also a Halal butchers attached.

A.S.M. Indian Grocery Ltd :Address:      75-83 Oldham Road, Ashton-under-Lyne, Lancashire. OL6 7DF,visited this shop yesterday for the first time (thanks to Razor for the heads up), they have everything you could possibly need ,i was especially pleased by the way they do ready packed chillies /peppers/toms all for a vey fair price, no butchers attached but a Indian boutique ,which the mrs liked and a cafe nextdoor.

Hope some of you find this post helpful and maybe we could start a list of , or is there already one!!!  :o

Lets Talk Curry / Fenugreek seeds / powder

Hi all just a quick question ,ive been practicing making curries from the site for 2 weeks now , ive managed to get myself some big bags of all the spices required apart from fenugreek, the question im asking are ground up fenugreek seeds the same as fenugreek powder?

Hi all first of all id like to say what an amazing website!!! i feel like ive found the holy grail :D
     Ive already had a stab at a few things from the website such as :- The belting Balti ,which came out spot on on apart from next time i will half the cinnamon. ive also made 2 batches of chicken tikka using Dipurajas marinade , id have to say this was exactly like takeaway tikka :D, lastnight i also made a large batch of Dipurajas seek kebab ,these were a complete success and had the family arguing who had , had the most!!!!
    Dunno about peoples location but ive been buying all my stuff from worldwide in Manchester , cracking little asian store they seem to stock everything.
   Anyways thats all for now.
