Lets Talk Curry / Beef Madras from Scratch

We have friends coming over next weekend for a curry night, and I've decided to do a chicken and beef madras from scratch rather than BIR style.
I'm sorted with the chicken version thanks to Mikes recipe but wonder if anyone has a good beef madras from scratch recipe I could use?

Wonder if anyone can help me?
I remember using a chicken curry recipe from Mike a couple of years ago, (called Mikes Chicken Curry strangely enough), and I've managed to los the recipe, does anyone know here it is on the forum?

Most, (if not all), curry recipes both here and on other sites call fro either green or red chillies.
But which ones, there are literally hundres of fifferent ones to choose from,the small packs as sold in supermarkets or do I need to go to an Indian breengrocer/supermarket?

Hi Guys,
This is my first posting but have been "lurking" for months on this brilliant site.  ;D
I have a couple of questions,
When a recipe calls for aniseed, should I use whole star aniseed or just the seeds themselves? (if whole star aniseed, do I crush the whole thing?).
Also, where can I buy Annatto powder here in the UK as I would prefer to use it rather than food colouring?
I know these will sound pretty basic questions to you guys, but hey ho, someone has to ask.  :-[
