Does anybody know how to make this dish, marinated chicken on the bone, flavoured with roasted and ground red chillis,coriander seeds,cumin and fenugreek leaves finished with a garlic sauce.

Hi, A couple of years ago, 'mickdabass' gave me advice  to tenderize lamb prior to making the dish.. simmering for an hour or so, unfortunately the first part of recipe with all the spices has been obliturated by a glass of wine... can anybody help. Many thanks Gatha
