Hi Phil.

Sorry, I have now updated the Post to include recipe process.

The darkening is caused by 1tsp of mix powder and 0.5 tsp of Kashmiri chilli powder.

Ah, that would indeed explain it.  When you wrote "chilli mushroom pilau", I imagined that the only chillies would be fresh, not dried and ground.  And of course the mix powder, too, would significantly affect the colour.

Mushroom Pilau is a favourite rice dish of mine, love it!
either in a BIR or cooked at home.
