Very nice looking indeed Chewy.  Regarding the Bullet Chillies... do you find them bitter at all, and do you scrape the seeds/pith out before cooking ?

The reason I asked is due to bitterness in a Jalfrezi that I experienced at a restaurant recently, which I associated with the Bullet Chilli seeds/pith in it... it seemed to taint an otherwise excellent curry. 

Interesting that you've not experienced bitterness with them (seeds/pith in and out).  I am really trying to put my finger (no pun intended) on the cause, maybe unripeness of the chillies used together with the pith/seeds left in. 

Know what you mean about finger/birdseye/thai chillies... the sharp piquancy of them is a fine line with bitterness.

A couple of questions.
1. I remember you said that your favourite pickle is the Priya ginger pickle as shown in your pic
Where can I buy some. Looked in several Asian stores but no luck so far.
Do you use it in your cooking of as an accompaniment?

2. I love your videos as they are very clear, entertaining and informative.
Any chance you will return to regularly producing more? For example this Kofta dish?

You might be right, but chillies being fresh and random, you never know what your going to get.
Have you ever had bitter chillies in your own cooking?
If so, just do a seed in / deseed  comparison test.

1. Very strong and well processed Pickle, good on its own.
At first I found it was the key to my Adraki Chicken/Lamb dishes I created.
but I started using small amounts in other dishes with really good results.

Sometimes its difficult to get locally, but itadka do it online, cheaper than some shops.
