Hi All,
Apologies if this has been posted elsewhere but a new cookery programme is due to start on Monday 9 July on BBC2 at 8.30pm - Indian Food Made Easy.
I guess it is unlikely to offer any restaurant secrets, however, there is bound to be some items of interest.
Just to change tack slightly, I just purchased Pat Chapman's new book - The New Curry Bible. Have any other members purchased or seen a copy and if so, what are your opinions?
I tried a version of his Madras, following the instructions for the base sauce (curry masala gravy), the spice mix (curry masala) and then integrated this into the recipe for Madras Curry Gravy. Don't think it has quite recreated the BIR flavour we are looking for and it maybe needs a little tweaking for my own preferences but it is certainly a useful addition to other recipes that have been posted.

I have the original Curry Bible by Pat Chapman (and many other of his books).

I think its an excellent book - lavishly illustrated, with a ton of useful information and many interesting and tasty recipes. 

I've used Pat's books and recipes as useful stepping stones to producing bigger and better things.  They are always a very useful and interesting source of reference.

hi guys
saw this programme last nite it was good and informative.there were some visits to restaurants to speak to the chefs have showed them how to cook tandoori chicken and make samosas then changed the recipes to some thing not really anything like the dish show by the chefs so a bit disappointed by it. why do the tv channels and the notorious pat chapman not give the people the people what they want. the secrets of BIR cooking! they say ctm is the nations fav dish so where else can you get the recipe RCR or this incredilble site......so all i can say is come on give us what we all want know and love to eat from our local restaurants and takeaways on the big screen. if i wanted to  just cook authentic dishes from india then there would be  no need for these sites i could just pick any book from a shop and turn out something which is good but it wil never be what i/we want. pcs recipes probably would be fine if he told you that all the recipes in his book were from one source/restaurant as is the recipe for the curry masala etc he has just tried to mismatch the recipes together just to make money i call this book frustrating great/informative but doesnot give the goods

I saw the first episode too and won't be in a hurry to watch anymore.  I love both BIR and authentic Indian food and love cooking both.

Why oh why in an Indian cookery program they show you decent samosas and proceed to tell you to use filo I will never know.  The proper pastry is not hard to make and delivers an infinitely better result.  It seems that cookery programs nowadays often treat their viewers like idiots.

Hi all,  ;) only caught a bit of this programme but it sounds a bit like Delhi Belly with the guy from the Kumars. They tend to show you what they think your interested in which is Authentic Indian cuisine and not restaurant style. Its a bit like Keith Floyd, he shows you a dish with a bit of this and a handful of that and a pinch or so of the other, but if you want the proper quantities you have to go buy the book.

After all, if someone told you how to cook your favourite Indian meal and it was an exact replica of your local BIR, how many times would you still visit said Curry house?

hi guys/gls
saw this prog and it was interesting when they went to the restaurant and saw tandoori chicken he he said paprika gives the red colour, and when questioned about the garlic/ginger paste having green bits (well spotted) he said it was green chillies/garlic and ginger could be worth a go. i know kris dillon used green chillies in her tandoori marinade and that was quite good.and i remember on floyd on india he went to a restaurant in india and did chicken tikka and they used firstly a chilli paste then yoghurt spice mix to marinade the chicken did try it but not my best attempt :( would love to see it in my local as it turns out a fantastic  chicken tikka :'( it's not fair! currently using modified version posted by good old pete who disappeared mysteriously off this forum oh so long ago, i miss him he did the job and got in the kitchens and he posted some of the best stuff on this site all in the pursuit of successfully producing the BIR curry the smell the taste the ectascy of tucking in to the best curry you have ever produced just like your favourite bir takeaway/restaurant. (sorry, got a bit emotional :-[) will repost petes marinade or you could just explore this fantastic site(2 newbies)

I fear the second show last night was even worse - all show and no substance - simply awful. Bring back Delia Smith and Madhur Jaffrey - they were both 100 times better.

I agree George, no one is going to knock up spicy lamb burgers for their mates when the footy is on, thats as far from curry as you can get.

All i want to see is a madras or Jalfrezi cooked in front of my eyes....

Ill still watch it next week though.... :-\

Same here, for the occasional micro-nugget of indirect information which might be useful. For example, last week she ignored all the advice from the head chef at a leading Indian restaurant on how to make good Kulfi. The presenter then said everyone should simply buy it ready made and tart it up a bit with a garnish. How lazy can you get? From the consistency and colour of the chef's milk (as seen on TV) I bet he starts with condensed milk, rather than simmer and reduce standard milk down for hours. In the first episode, it was interesting to see another restaurant's tandoor and some of the ingredients which the chef used, even though she ignored most of his advice and used eggs and CHEESE (wasn't it?!) in her tandoori marinade recipe!
